Job Detail

l Overall in-charge of central kitchen operations from food preparation to final product

l Focus on food & ingredients preparation such as seasoning & marinating of meat, chopping and peeling of vegetables and more (according to food menu requirement)

l Develop SOP for central kitchen in ensuring smooth production of food orders for various outlets and 3rd party orders

l Ensure quality of dishes at all stages of preparation, presentation, hygiene and safety

l Continuous engineering of new menu items, improvement of current menu items to increase overall sales and profitability of the Company

l Prepare food tasting for management approval if required

l Supervise kitchen operations to ensure high standards of food preparation, quality and consistency

l Ensure all operational activities and work stations adhere to relevant legislation, health & safety regulations and licensing conditions

l Inspect and ensure that all operating equipment is maintained in good working conditions and raise repair and maintenance request when necessary.

l Manage daily/weekly/monthly stock take/kitchen inventory

l Ensure the correct rotation by FIFO and maintain stock level of all food products

l Manage food costs, food wastage and purchasing of food supplies

l Assist superior in preparing operating budgets

l Responsible in developing& conducting training programs for all staff and review the progress and schedule

l To work in close conjunction with the Operations Manager and respective & teams, collecting guest feedback and focus on improvement and development.

l Liaise with Operations Management to schedule for cleaning and pest control

l Involve in manpower planning and recruitment process

l Other ad-hoc duties as assigned by the Management
